Her three hectares are split between Les Mesneux and the Grand Cru village of Le Mesnil-sur-Oger in the Côte des Blancs, planted to Pinot Noir, Pinot Meunier and Chardonnay on chalk soils layered with clay and limestone. She converted the estate to certified organic farming (Ecocert) and has practiced biodynamic viticulture since 2021, working in the cellar with indigenous yeast fermentations, full malolactic conversion, ageing across oak barrels, stainless steel and wooden vats, and no fining or filtration, with sulfur kept to a minimum or omitted entirely. Producing around 10,000 bottles a year across six cuvées, each carrying one of her hand-painted labels, Bougy has also revived Les Coullemets, a parcel of pure chalk once farmed by her grandmother.
