The Cuvee 744 consists of a blend of wines from the same vintage 2016, completed with approximately 30% vins de reserve stored in the cellar for several years.In this process, it becomes essential to capture the best of each vintage while avoiding denying the variations specific to each harvest. Once again for this blend, the brothers Chiquet managed to make a perfect assemblage: 55% of the best Pinot Noir and Meunier grapes from vineyards around the villages of Ay, Dizy and Hautvillers, and 45% Chardonnay grapes from vineyards in the villages of Avize and Oiry.
The base wines were spontaneously
fermented and aged in wooden barrels. The sunriped grapes never require more
than an extra-brut dosage for you to fully enjoy their terroir style,
this one has 0.75g/l.
The cuvee 700 concept is unique in Champagne and is the opposite of a non-vintage wine! The brothers seeks excellence rather than homogeneity and 'house style', in respect for the character of the vintage. The vineyards are mostly sloping, facing east, south or south-west where the chalk lies at varying depths below the soil.
Vintages: mostly from vintage 2016, light addition of reserve wines from previous vintages
From harvest: Aÿ, Dizy, Hautvillers (60%), Avize and Oiry (40%)
