Built in the early 18th Century, Château de Chamirey has a unique position on the Mercurey vineyard. The Domaine consists in 37 hectares reflecting the diverse soils and micro climates found within the appellation. In 1934, the Marquis de Jouennes, as a forerunner, decides to bottle the wines of Château de Cham irey, at the Domaine. Then, his son-in-law, Bertrand Devillard, carried on his work and extended the Domaine in the best terroirs of Mercurey, to reach its present size of 95 acres. Nowadays, Amaury et Aurore Devillard represent the 5th generation of Burgundy people, wine’s men and women.
Soil: mainly composed in clay and limestone with a limestone predominance
Pairing: salty cake, Lorraine quiche, tartar or white meats
Winemaking: To preserve their integrity, grapes are carefully harvested and sorted out by hand. Full clusters. Following the pneumatic press, juices stay in a vat overnight for a cool settling down and then are directly filled in barrels by gravity. Alcoholic and malolactic fermentations take place in barrels.
Ageing: Aging process is taking place 100% in traditional Burgundian 228 litres barrels as well as 400 litres barrels during 11 months with around 15% of new barrels. We only use light toasted French oak coming mainly from Bourgogne, Allier and Vosges forests. Light filtration before bottling.
