“With a beautiful ruby red color, the dress is bright and limpid and is adorned with dipped and undulating reflections between the purple and the cherry. On the nose we detect beautiful notes of eurs and small red fruits. The attack is frank and straight. The fruit is slightly crushed and gives a lot of juice in which the red dominates. The acidity is present, giving fullness and depth. This cuvée will go perfectly with red meat, a tartare or game.”Thierry Germain
The 50-hectare Domaine des Roches Neuves is run by Bordelais Thierry Germain and is situated in the appellation of Saumur-Champigny in the Loire Valley. The winery has existed since 1850, and since purchasing the estate in 1991, Thierry has turned it into one of the finest in France. The estate is run strictly along biodynamic lines, harvesting is manual and yields are low. Vinification is carried out only in small batches and the wines are neither filtered not fined.
Density : 10000 plots/ha
Vinification: Manual harvest in box, sorting table for the harvest before vatting by conveyor belt. Fermentation in oval vats at a temperature of 16 to 22 degrees so as to extract the maximum of aromas and fat; end of fermentations at a temperature of 24 degrees. Fermentation for 8 to 10 days, 100% whole bunches on this cuvée.
