“A beautiful intense ruby ​​color. The nose releases pretty minty nuances, red fruit liqueur or even star anise.

Red fruits like blackcurrant, blackberry, cherry, blueberry and raspberry; floral notes of peony, violet, pink; spicy notes of vanilla, cinnamon, and Sichuan pepper. On the palate, the attack is straight, powerful and immediately suggests the full potential of a great terroir. Its intense fruitiness seems imposing and the acidity, without ostentation, draws the contours of the material guaranteeing the aromatic identity of the flavors. OUR NOTES 

The 50-hectare Domaine des Roches Neuves is run by Bordelais Thierry Germain and is situated in the appellation of Saumur-Champigny in the Loire Valley. The winery has existed since 1850, and since purchasing the estate in 1991, Thierry has turned it into one of the finest in France. The estate is run strictly along biodynamic lines, harvesting is manual and yields are low. Vinification is carried out only in small batches and the wines are neither filtered not fined.

Grapes: 100% Cabernet Franc 

From: France, Loire Valley, Saumur Champigny, lieu-dit Les Dares (Chaintres) 

Terroir: Clay and limestone with a Turonian dominance

Vinification: Manual harvest with sorting on the table at the reception in the cellar.Yield: 35 hl / ha. Fermentation of the wine in wooden vats with very slight pumping over just to wet the cap, followed by a maceration of 22 to 24 days depending on the type of wine we are looking for. Malolactic fermentation in 25 hl round wooden vats from Stoeckinger. 12 months aging in 228 liter barrels.
