“The color is straw yellow, almost crystalline, bright and shiny. The nose combines concentration, freshness, generosity and power. The second nose reveals subtle fruity, oral and vegetable scents. Next come aromas of white pulp fruit (pear, peach) and citrus (lemon, grapefruit ...). We also note verbena and linden. On the palate, the attack is straight and velvety and sensuality mingle suggesting all the potential of a great terroir. The acidity is present, without ostentation and draws the contours of the material guaranteeing the aromatic identity of the flavors. Its root expression (gentian and ginger) and its point of armor gives it the elasticity and solidity that brings it verticality. The alcohol is coated and architecture the matter in its horizontality. Of energetic character, the matter does not lack density. The 50-hectare Domaine des Roches Neuves is run by Bordelais Thierry Germain and is situated in the appellation of Saumur-Champigny in the Loire Valley. The winery has existed since 1850, and since purchasing the estate in 1991, Thierry has turned it into one of the finest in France. The estate is run strictly along biodynamic lines, harvesting is manual and yields are low. Vinification is carried out only in small batches and the wines are neither filtered not fined.


Vinification: Manual harvesting in a casket. Alcoholic fermentation in lightning from Stoeckinger of 12 hl oval so as to preserve all the minerality of the basement by a discreet aging in mass. Pneumatic pressing of 4 hours, natural degrees of 12.8 °, fermentation time of 4 months. Aging on the lees for 9 months.
