Tasting notes: Undeniable strength with plenty of body around a core of pear, almond, lemon zest and vanilla bean. This wine benefits greatly from ageing, with honey, marzipan and caramel notes shining through the palate.

"Pale lemon. Powerful character. Stands up like a limestone menhir. Too concentrated to see all the detail yet, with also a little salinity. Mostly white fruit but with some riper yellow tints to it. Clean at the finish, not too oaky, and of course persistent."
About the winery:
The Pillot origins date back to the 17th century in Chassagne, our ancestors worked the vines, the wine and especially made barrels. And it was in the 19th century that the Pillot family abandoned the cooperage and expanded the property on the hillsides of Chassagne-Montrachet. Fernand and his son Laurent, the 4th generation, extended the estate again in 1992, then in 2001 with the takeover of the Pothier-Rieusset vines in Pommard. Today, we operate 14.8 ha of vines for a total of 22 appellations. The vineyard plots are concentrated on Chassagne-Montrachet and Pommard mainly but also on the terroirs of Santeany, Saint-Aubin, Puligny-Montrachet, Meursault, Volnay and Beaune. All our wines are vinified and matured in our cellar in Chassagne-Montrachet, combining modern facilities with respect for traditions and our age-old terroirs. Our vines are worked organically with great care and the soils are cultivated without the use of chemical herbicides. We have been members of the Dephy-ECO-phyto group since 2012.
