Chablis

Chablis sits apart from the rest of Burgundy, an isolated outpost roughly halfway between the Côte d'Or and Champagne, where a unique band of Kimmeridgian limestone — rich in ancient fossilised oyster shells — gives the region's Chardonnay its unmistakable flinty, saline character. Chablis is the reference point for lean, mineral-driven Chardonnay made with little to no oak influence, in sharp contrast to the richer, more textured styles of Meursault or Puligny-Montrachet.

The appellation spans four tiers of increasing intensity — Petit Chablis, Chablis, Premier Cru, and Grand Cru — with the seven Grand Cru climats overlooking the town producing the region's most powerful, age-worthy wines.
