Tasting notes
Straw yellow with an expressive, fragrant nose of citrus, pear and Mirabelle plum, lifted by a pleasant mineral touch. The palate is full and generous, led by citrus fruit, with a rich, almost oily texture balanced by Chablis freshness. Unoaked and charming, it pairs beautifully with oysters, shellfish, grilled fish and goat cheese.
About the Winery
Domaine Ellevin is a family estate in Chichée, just outside Chablis, covering around 13 hectares across Petit Chablis, Chablis and the Premier Crus Vaucoupin and Vosgros. Jean-Pierre Ellevin has led the domaine for decades and now works alongside his son Alexandre.
The family farms sustainably and ages its Premier Crus in tank to preserve the purity of the fruit and the mineral character of the limestone soils. Vaucoupin, one of the larger Premier Crus of Chablis, gives a ripe, round and generous style.
