The Domain

The Domaine des Perdrix was taken over in 1996 by the Devillard family, involved in wine for 5 generations. The vines of the estate were in perfect condition and large investments were made in the winery to take advantage of current techniques: table sorting, control of vinification temperatures, pneumatic punching down. Most of the estate's production was previously sold to a wine merchant, so the estate was not very well known. This is why Robert Parker said that even in the great terroirs of the Côte de Nuits, one could still make discoveries of great quality. The 15 hectares of the domain are spread over great terroirs: Vosne-Romanee, Nuits-Saint-Georges, Nuits-Saint-Georges Premier Cru "Aux Perdrix" (a quasi-monopoly since the domain owns 99% of this great finage) and Echezeaux Grand Cru. More than half of the vines are classified as Premiers Crus and Grands Crus.
 

The Style

The team brings the greatest rigor and extreme exigency to the care of its vines, its vinification and the maturation of its wines. The Domaine des Perdrix knows how to take risks by waiting for the optimal maturity, the one that is reached when the pips crack under the tooth and have lost all their bitterness. The grapes, harvested by hand, are sorted before being put into vats to eliminate those that are unripe or degraded. The vatting is done in three phases: pre-fermentation maceration, fermentation and post-fermentation maceration. Most of the wines are aged in oak barrels (about 18 months), a quarter of which is replaced each year. The bottling is done when the wines are still on their primary aromas of fruits and flowers.
