100% Chardonnay
Tasting notes
Pale lemon in colour, fresh and precise, with light floral notes, lemon peel and gooseberry on the nose. The palate is taut and mineral with a touch of salinity, finishing clean and bright. Raised in larger, older barrels to keep the focus on purity rather than oak. A lovely aperitif white, also excellent with oysters, white fish and goat cheese.
About the Winery
Camille and Guillaume Boillot are writing their own chapter in Meursault. Guillaume is the son of Henri Boillot and worked alongside his father from 2011, while Camille is the fifth generation of a winegrowing family from Pommard. Together with their four children, they founded their own domaine, combining their own vines with carefully sourced grapes across Meursault, Puligny-Montrachet, Saint-Romain, Auxey-Duresses and Pommard.
Sous le Château is one of the finest climats of Saint-Romain, a cool, high-altitude village in the hills behind Meursault, whose stony limestone soils give whites of freshness and tension.
