Tasting notes
Domaine de la Borde's Vin Jaune from Arbois Pupillin, France, is a white wine known for its complex and unique flavor profile. It's made from Savagnin grapes and features intense, nutty, and sometimes even cheesy or yeasty notes, along with hints of dried fruits and spices. The aging process, which involves extended maturation under a layer of flor (a yeast bloom), contributes to the wine's characteristic oxidized, toasty, and caramel-like flavors, similar to a dry Fino Sherry.
More About The Winery
Founded in 2003 by Julien Mareschal, Domaine de la Borde is one of the rising stars of the Jura region, located in Pupillin, the spiritual home of Ploussard. Farming just 5 hectares of steep, marl-rich slopes, Mareschal produces wines of rare precision and authenticity, firmly rooted in their terroir.
The domaine is cultivated according to organic and biodynamic principles, with minimal intervention in the cellar to allow each grape and parcel to fully express itself. Key varieties include Savagnin, Chardonnay, Pinot Noir, Trousseau, and Ploussard, vinified in both traditional and experimental styles. From vibrant ouillé whites to powerful oxidative expressions, Domaine de la Borde showcases the diverse identities of Jura wines.
Acclaimed for their energy, tension, and ageing potential, these wines are sought after by sommeliers and collectors worldwide.
