Grown on the pure chalk of Les Coullemets, a plot once farmed by Élise's grandmother, this Blanc de Blancs shows vibrant acidity, focused citrus fruit and remarkable length. Extended lees ageing builds a creamy texture and a complex, layered bouquet, with the chalky brilliance characteristic of Le Mesnil-sur-Oger coming through on the finish.

More About The Winery

Élise Bougy returned to her family's estate in Les Mesneux, a Premier Cru village in the Montagne de Reims, in 2016 after studying oenology in Dijon, driven by a mission to restore harmony and biodiversity to the vineyards of her native Champagne. Her three hectares are split between Les Mesneux and the Grand Cru village of Le Mesnil-sur-Oger in the Côte des Blancs, planted to Pinot Noir, Pinot Meunier and Chardonnay on chalk soils layered with clay and limestone. She converted the estate to certified organic farming (Ecocert) and has practiced biodynamic viticulture since 2021, working in the cellar with indigenous yeast fermentations, full malolactic conversion, ageing across oak barrels, stainless steel and wooden vats, and no fining or filtration, with sulfur kept to a minimum or omitted entirely. Producing around 10,000 bottles a year across six cuvées, each carrying one of her hand-painted labels, Bougy has also revived Les Coullemets, a parcel of pure chalk once farmed by her grandmother. Her wines have earned her a reputation among a new generation of growers pushing Champagne toward greater precision and terroir transparency.
