Tasting notes
Château-Chalon is the most prestigious of all Vin Jaunes. Expect a bright golden colour and an intense, complex nose of walnut, almond, curry spice and dried fruit, with a fresh, tense and mineral palate of great persistence. Restrained yet powerful, it is a wine for long ageing. Serve at cellar temperature, not too cold, with Comté, chicken with morels and vin jaune sauce, or lobster.
About the Winery
Domaine Courbet is a family estate in Névy-sur-Seille, just below the village of Château-Chalon, the spiritual home of Vin Jaune. Run by the same family for five generations, the domaine is today in the hands of Damien Courbet, who converted it to biodynamics and certified organic farming, and is among the notable landowners in Château-Chalon itself.
Sous Roche refers to vines beneath the cliff of Château-Chalon. Made from Savagnin, the wine is aged under a veil of yeast (sous voile) in barrel for more than six years without topping up, as required for Château-Chalon, and is bottled in the traditional 62 cl clavelin.
