The 2023 “Les Vercots” is a cuvée of real character, from a discreet yet distinctive Premier Cru historically linked to the Abbey of Cîteaux. The parcel covers less than one hectare, planted in 2004 and 2014 at high density (11,000 vines/ha) with an ideal east-facing exposure that encourages slow, even ripening.

Pinot Noir here delivers a dense core and a tight, finely grained tannic structure that is emblematic of Aloxe-Corton. Harvested entirely by hand, the grapes undergo total de-stemming, optical sorting, and gravity-fed vatting. Fermentation is gentle and precise, with daily punch-downs over roughly twelve days, followed by pneumatic pressing.

A historic family estate in Chorey-lès-Beaune, Domaine Tollot-Beaut has been crafting wines since the late 19th century. Today, it stands as one of the reference points for the appellation, known for its consistency, precision, and deeply rooted Burgundian identity.

The domaine farms vineyards across Chorey-lès-Beaune as well as neighbouring appellations such as Savigny-lès-Beaune, Beaune, and Aloxe-Corton. The soils—a mix of limestone and clay with alluvial influences—bring both structure and approachability to the wines.

Pinot Noir is the sole focus here, expressed in a style that is both generous and finely balanced. Compared to the more delicate expressions of the Côte de Nuits, Tollot-Beaut’s wines offer a slightly broader profile, with ripe red and dark fruits, gentle spice, and a subtle earthy depth.

The tannins are present yet supple, making the wines approachable in their youth while still offering the capacity to age. The winemaking approach remains traditional, with careful extraction and measured use of oak to preserve the integrity of the fruit.
