Tasting notes
The most structured of Tollot-Beaut's Savigny Premier Crus. Expect pure red cherry and cranberry fruit with floral hints of rose and violet, a subtle touch of oak and fine, dusty tannins. Fresh and elegant, it is enjoyable young but gains depth and weight with a few years in the cellar. Aged for around 16 months in barrel. Lovely with roast poultry, duck or veal.
About the Winery
The Tollot family has grown vines in Chorey-lès-Beaune since the late 1800s, and Tollot-Beaut was among the first Burgundy estates to bottle its own wines in the 1920s. Today cousins Nathalie, Jean-Paul and Olivier Tollot run the domaine, which stretches across Chorey, Savigny, Beaune and Aloxe-Corton up to Grand Cru level.
Champ Chevrey is one of the estate's two monopoles: a small Premier Cru vineyard of about 1.5 hectares in Savigny-lès-Beaune, owned entirely by the family. Its old vines, planted in the 1950s on stony clay-limestone soils, give a Savigny with real structure and finesse.
