The Domain
Founded in 1834 on the slopes of the Hermitage hill in Tain l’Hermitage, Maison Paul Jaboulet Aîné safeguards an exceptional heritage, bringing together the most renowned terroirs of the Northern Rhône Valley, and embodying the very essence of fine wine.
With over one hundred hectares spread across the most prestigious appellations of the Northern Rhône Valley, this pivotal time of year demands meticulous organisation to harvest the grapes at perfect maturity. For about a month, pickers, carriers, and drivers work tirelessly each day to bring a new great vintage to life.

The Style
THE WHITE WINE CELLAR
Home to concrete eggs, barrels, demi-muids, truncated conical vats, and Clayvers. We adapt our choice of vessels according to the volume and style of each cuvée, with a significant reduction in the use of oak in recent years.
THE RED WINE CELLAR
Equipped with concrete eggs, wooden truncated conical vats, barrels, and a few demi-muids. The ageing of our red wines varies in both vessel choice and duration, depending on the cuvée. Our Hermitage receives a longer élevage—around 12 months in oak—while Thalabert is typically aged for 9 months. These durations may evolve from one vintage to another.
Each year, barrels are selected according to the cooper, the origin of the wood, and the level of toast. For reds, we work with 5 to 6 different coopers. Blending the barrels from these different sources creates a unique and complex alchemy. Tastings from the various barrels take place throughout the ageing process to ensure optimal harmony.
