MCMLV = 1955 = the year these Sauvignon vines were planted! The vines are farmed biodynamically on a southeast facing slope of very well drained marl soils, which yield very concentrated grapes of an ochre yellow colour – like globes of gold! The grapes are harvested by hand, with yields of 40 hl/ha. Vinification: direct pressing for half the grapes and pressing for 5 days for the rest, followed by 18 months of maturation in barrels with a quarter of them new oak. Unfiltered, bottled at the estate after a light fining, with sparing use of sulphites.

A wine of great class, devoid of varietal notes, with a complex nose of stone fruit, spices, citrus fruit, and mineral notes. The palate is full-bodied and taut, with great freshness – this is already drinking very well, but if you can resist opening it, leave it in the cellar a few years.

Since 2018, with the arrival of Antoine Gouffier, Domaine du Bouchot has brought new energy and vision to Pouilly-Fumé. After twelve years away, Antoine returned to his native land to craft wines that respect both life and terroir, reviving an appellation that had been drifting into convention.

The domaine covers just over 10 hectares of Sauvignon Blanc in Saint-Andelain, farmed with a deep commitment to sustainability: certified Organic since 2009 (the first in the appellation) and Demeter-certified Biodynamic since 2020. This long-term transformation, initiated by former owners Rachel and Pascal Kerbiquet, is now carried forward with Antoine’s precision and passion.

His philosophy emphasizes perfect ripening — with harvests later than the regional norm — to produce wines of depth, freshness, and individuality. The approach mirrors the Burgundian model, focusing on the soil-vine-exposure balance to highlight terroir.

Recognized as “Discovery of the Year 2022” by Revue du Vin de France, Domaine du Bouchot’s first vintages under Antoine have stood out in blind tastings, confirming its place among the most exciting new voices of Pouilly-Fumé.
