(Savagnin "ouillé", means non oxidative.)
Tasting notes: Arbois Pupillin, Jura, France. Biodynamic. Partially de-stemmed (50%) and fermented with natural yeasts in large barrels. The soils here are gray and blue marls soils made up of a kind of slate that breaks like cardboard. The wine has a smoky, flinty note on the nose and beautiful aromas of tangerine peel. A vibrant palate, with some salty notes on the finish.

'The 2020 Arbois Pupillin Savagnin Ouillé Foudre A Canon Nature has a beautiful nose. 2020 was an overall warm vintage, warmer than 2019, but Julien considers it a good year for Savagnin ouillé. The sensation in the palate is dry, with some fine tannins that will allow it stand up to food.'
About the Winery
Domaine de la Borde is a tiny Jura estate in the appellation of Arbois-Pupillin that makes excellent, high-character wines. Winemaker Julien Mareschel might not have much space to work with, but he certainly makes the most of it.
Three and a half of the domaine's five hectares are dedicated to growing white varieties (Chardonnay and Savagnin), with the remaining hectare and a half going to red (Trousseau, Pinot Noir and Ploussard).
Half of the vines are more than 30 years old, and the other half were planted between 1985 and 1990, and the estate is entirely organic/biodynamic.
A unique terroir, strict hand-harvesting of the grapes, and a meticulous vinification process ensure the wines have a distinct sense of place—not to mention the kind of nuance and head-turning character that adventurous palates are always searching for.
