Grapes: Sauvignon Blanc - Organic
Tasting notes:MCMLV = 1955 = the year these Sauvignon vines were planted! The vines are farmed biodynamically on a southeast facing slope of very well drained marl soils, which yield very concentrated grapes of an ochre yellow colour – like globes of gold! The grapes are harvested by hand, with yields of 40 hl/ha. Vinification: direct pressing for half the grapes and pressing for 5 days for the rest, followed by 18 months of maturation in barrels with a quarter of them new oak. Unfiltered, bottled at the estate after a light fining, with sparing use of sulphites.
A wine of great class, devoid of varietal notes, with a complex nose of stone fruit, spices, citrus fruit, and mineral notes. The palate is full-bodied and taut, with great freshness – this is already drinking very well, but if you can resist opening it, leave it in the cellar a few years.
Pairing suggestion: A total treat with seafood pasta dishes, lemon and butter baked fish, cod with white asparagus on saffron beurre blanc, Fennel Mussel Risotto...
About the winery: Located on the right bank of the Loire river, the Domaine du Bouchot was the first area certified organic farming AOP Pouilly Fumé in 2009. Its 10 hectares of vines from the Sauvignon grape are planted on the south-west side of the hill from the village of Saint Andelain, the soils are mainly clay and limestone from the Kimmeridgian era. The configuration of the estate, isolated in the center of its vineyards, allows a very precise biodynamic work, the vinifications that follow are done with a very little intervention and the wines produced express the finesse of a preserved terroir.
2018 marks the arrival of Antoine Gouffier, young winemaker and child of the village, who takes over from the Kerbiquet family with great energy. By going around the world, this backpacker decided, like Ulysses, to return home. After 12 years between New York, California, Argentina, Africa and the Middle East, between trade, commerce and catering, he still had to settle in an area. His young wife helped him there. Soon she will be part of the affair. With Pascal Kerbiquet, his mentor, prophet of Bio and Pygmalion of biodynamics, he found his haven in Bouchot: the semi-solitude of the craftsman for a fan of discoveries...
